The Perfect Pizza Dough

What you need:

- Flour (I recommend Tipo 00’ flour)
- Semonila flour (Adds great colour)
- Lukewarm water
- Pinch of salt (use fine table salt)
- Olive oil (4 tbs)
- 2 packs of instant yeast
- Caster sugar (1/2 tsp)
- Honey (1/2 tsp)

What to do:

1. Sift your flour onto a nice big surface with the salt
2. Once you have mixed it well create a well
3. Now take your water, add yeast, sugar, honey, and olive oil
4. Let that chill for a about 15min or until you start seeing foam like a beer
5. Add the water mixture into the middle of the well
6. Slowly start to bring in the flour into the well with a fork or with your hands
7. Continue to work it all in until you have used up all the water and a dough starts to form, work the dough until you have a beautiful ball of dough
8. Now get a nice glass bowl big enough to host double portion of your current dough size, place a few small drops of olive oil and place the dough inside, cover with a dampish cloth and let it chill in the sun for about an hour
9. Once its raised, punch the air out, place some flour on your working surface and onto your hands and then place dough on the surface and work it for about 5min just until all the air is pressed out
10. Divide your dough up and get cracking …

Pizza Base Sauce

What you need:

- Peeled tinned tomatoes
- Oregano
- Brown sugar
- Salt and pepper
- Garlic cloves
- 2 shallots / 1 red onion
- Fresh basil
- Olive oil

What To Do:

1. Olive oil in a sauce pan
2. Finely diced onion/shallot as well as garlic cloves until you get a good colour and onions have sweated
3. Add your peeled tomatoes and mush them with a wooden spoon as much as you can
4. Add brown sugar
5. Add oregano and seasoning
6. Bring everything to a boil and add basil leaves (tear them with your hands)
7. Once it boiled take it off the heat and strain through a sieve
8. Bring it back to the oil and add last touch of seasoning

Enjoy on pizza, pasta, and even on a slice of toasted bruschetta 
