Recipe: Episode 2 - Scotch Eggs with Cheesy Mustard Sauce

Recipe:  Episode 2 - Scotch Eggs with Cheesy Mustard Sauce Image : 117

What you need:

6 eggs
2 rolls of Chorizo sausage and pork sausage mixed
2/3 cup chopped garden herbs (a mix of parsley and chives are ideal)
1 Tbsp. mustard
1/8 tsp. ground nutmeg
Salt, to taste
Pepper, to taste
1 cup flour
Knorr Crispy & tasty chicken coating with cheesy dip
1 cup bread crumbs (fresh bread crumbs are best)
3 cups canola oil (you need a high heat oil for frying).

What to do:

Put 6 eggs in a pot and fill with cold water to cover them.
Bring to water to a boil and immediately take off the stove.
Put a lid on the pot and let the eggs sit for ONLY 3 minutes.
Carefully drain, then fill pan with ice water to cool eggs.
Carefully and very gently, peel the eggs under cold water.
Place the peeled eggs in a bowl of very cold water. (If you are making the eggs ahead, refrigerate them, always handling carefully.)

Make the Sausage Covering:

In a bowl combine the sausage with the mustard, a pinch of nutmeg and chopped garden herbs available to you (chives and parsley are great choices). Mix very well.

Prepare the Scotch Eggs:

Put flour in a shallow bowl or a soup bowl.
Put breadcrumbs in a shallow bowl.
Put remaining 2 eggs in a shallow bowl and whisk.
Divide the sausage mixture into 6 equal pieces and flatten them into patties large enough to cover the egg with.
Put an egg on top of patty and carefully wrap the sausage around egg, gently sealing to completely. Do the same with the remaining 5 eggs.
One at a time, roll each sausage-covered egg in flour, next roll it in the whisked eggs, and lastly bread crumbs.

Fry the Scotch Eggs:

In a deep frying pan or large pot, add 2 inches of oil (this will just cover your eggs).
Heat the oil to 350 degrees over medium heat (unless you’re an experienced fryer, you’ll probably want a thermometer to gauge the temperature).
Carefully add the eggs and fry until browned and crisp, around 4 to 6 minutes (the sausage needs to be thoroughly cooked). Turn the eggs a couple of times to cook on all sides. Be sure to maintain a temperature of 350.
Remove from oil and place eggs on paper towels to drain.
Serve warm with the Knorr Cheesy dip.

For the Sauce:
Follow the Knorr package instructions in order to make the cheesy dip add some Dijon mustard. Serve and enjoy.
