Tiron Eloff shares his amazing Italian Minestrone Soup recipe.

Italian Minestrone Soup, literally means “Big Soup”.

It is very nutritious and one of my all time favourite winter warmers. With winter in full swing, give it a try for an easy meal on a very cold day.


1 tbs olive oil

1 medium onion

2 carrots diced

2 celery stalks, diced

2 garlic cloves, minced

300g beef shin/chuck cubed

2 large potatoes, skinned and diced

2 large tomatoes, skinned and diced

3 fresh basil leaves

250g cannellini beans

150g French beans

300g cabbage shredded

3 courgettes

250g short pasta( any shape)

Parmigiano cheese



Fry the onion, carrots, celery, garlic in a pot gently. This is your Mirepoix or Sofritto.

Add the meat and brown in the pot for a few minutes until seared and coloured.

Add the potatoes and fry for two minutes.

Add the tomatoes and simmer for 10 minutes.

At this stage, add the water, basil and beans.

Season with salt and pepper and simmer for two hours on a low heat.

Add the remaining vegetables and simmer for a further eight minutes.

Add pasta and cook for eight to 10 minutes or until al dente.

Sprinkle with Parmigiano and serve.


Note**  If using canned beans, add just after the pasta to warm through.

Note** If using fresh beans, soak them overnight before use.
