This is the recipe for a West African Ginger Cocktail.

You will need:

3 large ginger roots
6 limes
2-3 cups of water
1 heaped tbsp peppercorns
1 heaped tbsp raw sugar

To make:

Chop the ginger into small pieces. 

Chop lime into slices.

Add ginger pieces and lime slices to two to three cups of water.

Strain the mixture through a sieve and squeeze remaining juice into a bowl.

In the blender, add peppercorns, sugar and the strained liquid and blend until smooth.

Strain the mixture through a sieve into a saucepan.

Heat the saucepan and bring the liquid to the boil then allow it to cool.  

Pour the cooled mixture into a glass, add ice and serve.

There you have it, the West African Ginger Cocktail.
